Since we're interacting with Monero, does anyone take other privacy practices seriously, like self-hosting, using cash, and encrypting everything, rather than just focusing on 'important' files? Do you trade some privacy for convenience?

I am all in on the privacy. I do the things you listed, plus more.

F convenience, convenience is how people stay enslaved to their big tech overlords.
It was difficult at first but over time I got used to the inconvenience. This made me realize that most people are weak and just follow the path of least resistance, even though it is harmful for them.

Given a choice between a world with "cheap" and accessible entertainment (Netflix, doomscrolling platforms, sports games, p0rn) but a very draconian government, or a world with a near-perfect government and much freedom but no easy entertainment + you have to actually work hard for such things, I think most people today will choose the former. (/unrant)

so yes:
self-hosting, cash, encrypted everything, no big tech (except when acquaintances use it), no social media, no scrolling, no cell networks (except for emergency), no closed source software etc.

I'm gonna try Qubes and get a laptop for it soon. Currently using Fedora on a Macbook. Probably won't daily drive it, but it might be fun.
